Moriyama is first interested in painting before turning definitively to photography. In 1961, at the age of 21, he moved to Tokyo where he became the assistant of Eikō Hosoe, one of the founders of the agency Vivo. He was part of the group "Provoke", gathered around the magazine of the same name, in the late 60s.

He works in Japan and New York, but his favorite district is Shinjuku, with its narrow streets where all layers of the population mix. He likes to walk there, to take pictures of the same places over and over again, and play with his memory and memories. When he wanders, Moriyama enters, so to speak, in a trance, his whole body on the lookout. He turns into a hunter of images or, to use his own words, a stray dog.

One of his most famous photographs is that of a blind beggar on the Tokyo subway. At the moment of the click, he looks at the photographer, he was a real beggar, but a fake blind man.

Moriyama is best known for his black-and-white photographs, with marked contrasts and strong grain. His pictures are original, and he likes to play with complex layers, for example by incorporating into his photos the inscriptions of the city, the reflections of windows or advertising images, more or less faded. Sometimes his photos seem flawed because they can be blurry or overexposed.
